Grilled Vegetables with Roasted Garlic Balsamic Vinaigrette |

| Ingredients: |
8 flat mushrooms
1 red capsicum
1 green capsicum
4 courgettes
12 asparagus spears
Olive or Avocado Oil
|
| Directions: |
Wipe mushrooms. Cut capsicums in half and de-seed. Cut into quarters. Trim courgettes and halve lengthwise. Brush vegetables with oil and grill under hot grill or on the barbecue until cooked. Arrange on serving dish and splash over vinaigrette. Serve warm. |
